The Perfect Scrambled Eggs

Serves 2


Ingredients:

  • 4 eggs

  • 2 tbsp milk

  • 2 knobs of butter

  • 1 tbsp olive oil

  • salt & pepper, to taste

  • 1 tsp chopped chives


Method:

  1. In a medium bowl, beat together the eggs, milk, salt and pepper.

  2. Heat one knob of butter and the olive oil in a small pan until the butter has melted.

  3. Pour in the egg mixture.

  4. As the eggs begin to set, gently pull the eggs across the pan with a spatula.

  5. Stir constantly. Love the pan on and off the heat every few seconds until the eggs are creamy.

  6. As soon as the eggs are nearly cooked, switch off the heat. Add the remaining knob of butter and chives and stir for one last time.

  7. Serve warm and enjoy!
