Roasted Garlic Hummus

Prep Time: 10 minutes


Ingredients:

  • 1 large can of chickpeas

  • 1 large can of butter beans

  • 100 ml extra virgin olive oil

  • 1 head of garlic

  • 2 tbsp lemon juice

  • 1 to 2 tbsp of water

  • Salt and pepper, to taste

Method:

  1. Pre-heat oven to 200°C

  2. Cut the garlic head into two, horizontally. Place it in a piece of foil that’s large enough to wrap around. Lightly drizzle with the olive oil and season with salt and pepper. Close the foil up. Bake in a heated oven for approx. 40 minutes or until the garlic is soft and caramelized. Once cooked, let it cool down and then peel the garlic cloves.

  3. In a food processor, place the chickpeas, butter beans, roasted garlic, olive oil, lemon juice, salt and pepper. Pulse or blend until the desired texture is achieved. (We prefer a chunky hummus rather than a smooth one).

  4. Add a little bit of water and adjust seasoning, if necessary and blend again.
