Cheesy Potato & Carrot Fritters - ft. Kiddies Food Kutter & Safety Food Peeler

Ingredients:

  • 750gr potatoes

  • 2 medium sized carrots

  • 1 large onion, chopped

  • 2 cloves of garlic, crushed

  • 1 tbsp olive oil

  • Salt & Pepper, to taste

  • 100gr cheddar, grated

  • breadcrumbs

  • vegetable oil, for frying

Method:

  1. Peel, cut and wash the potatoes and the carrots.

  2. Place them in a medium sized pot and cover with water.

  3. Place the pot over medium-high heat and bring to a boil. Let them simmer for around 20 minutes or until they are easy to pierce with a knife.

  4. While the potatoes and carrots are boiling, pour the olive oil in a small pan and fry the onion and garlic until golden brown. Season with salt and pepper. Set aside to cool.

  5. Once the potatoes and carrots are cooked through, drain in a colander. Transfer them to a bowl and mash them using a potato masher.

  6. Add the cooled onion and garlic mixture, the cheese and season with salt and pepper.

  7. Give the mixture a good stir.

  8. Form into small patties.

  9. Place a heavy-bottomed frying pan over medium-high heat and pour the vegetable oil (enough to cover the bottom of the pan). Shallow fry the patties until golden brown on both sides.

  10. Once ready, transfer them to a plate (lined with paper towels).

  11. Serve hot. Enjoy :)
