'Patata il-Forn' Maltese Style Oven-Baked Potatoes

Ingredients:

  • 1 kg potatoes, sliced

  • 2 onions, sliced

  • 1 tbsp olive oil

  • 1 tsp dried fennel seeds

  • 2 garlic cloves, minced

  • Salt and Pepper

  • 250 ml chicken stock

Method:

  1. Pre-heat the oven to 180°C.

  2. In an oven proof dish, mix together all the ingredients.

  3. Cover with aluminum foil and bake covered for 1 hour or until the potatoes are soft.

  4. Uncover and cook further until the potatoes are crunchy on top
