Ingredients:
1 kg potatoes, sliced
2 onions, sliced
1 tbsp olive oil
1 tsp dried fennel seeds
2 garlic cloves, minced
Salt and Pepper
250 ml chicken stock
Method:
Pre-heat the oven to 180°C.
In an oven proof dish, mix together all the ingredients.
Cover with aluminum foil and bake covered for 1 hour or until the potatoes are soft.
Uncover and cook further until the potatoes are crunchy on top
