Lunchbox Idea - Smoked Salmon and Avocado Sandwich

Prep Time: 10 minutes


Ingredients:

For the sandwich:

  • 2 slices wholemeal bread

  • 1 to 2 slices smoked salmon

  • ¼ avocado, peeled and sliced

  • 1 tbsp Extra-virgin olive oil

  • Salt

  • Pepper

Sides:

  • 2 small cucumbers

  • ¼ apple, sliced (squeeze lemon juice on top to keep it from going brown)

  • Dried fruit roll-up
